They're simultaneously drier and creamier than orange-fleshed sweet potatoes, which means that when you roast them at high heat (cubes, wedges, circles, or halves, simply coated with olive oil and salt and cooked between 425 and 450°), their edges get unbelievably crispy and burnished, belying the pudding-like centers.

Nutty and mild, Japanese sweet potatoes have a thin red skin and dense white flesh. Often baked, candied or made into pies, they also make a delicious side dish when scalloped with sliced apples and a creamy sauce.

We strive to choose only organically grown or certified organic produce from as close to home as possible. However, sometimes we are unable to find a local AND organic option, and in that event we may choose to offer a pesiticide-free local product from a farmer that uses integrated pest management on their crops.

Japanese Sweet Potatoes do best stored in a well-ventilated, cool but not refrigerated, dark place. They should be stored loose (in a bin or bowl) away from any heat sources like the oven. If they must be bagged, avoid plastic bags, and poke a few air holes in the bag for circulation.
