Roasted Jicama

Ingredients

  • 2 cups jicama, cut into 1 inch cubes
  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, pressed or minced finely
  • 1 teaspoon rosemary
  • 1 teaspoon parsley

Directions

  1. 1) Toss all ingredients together.
  2. 2) Spread in baking pan.
  3. 3) Roast in 400 degree oven for 1 hour stirring every 15 minutes.
