Garlic Mushroom Quinoa

Shopping List

  1. White Mushrooms (8 oz)
  2. Colossal Garlic (1 ct)
  3. Thyme (1 bunch)
  4. 1 cup quinoa
  5. 1 tablespoon olive oil
  6. Kosher salt and ground black pepper
  7. 2 tablespoons grated Parmesan

Ingredients

  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 8 oz white mushrooms, thinly sliced
  • 5 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Kosher salt and ground black pepper
  • 2 tablespoons grated Parmesan

Directions

  1. 1) In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside.

  3. 2) Heat olive oil in a large skillet over medium high heat. Add mushrooms, garlic and thyme, and cook, stirring occasionally, about 3-4 minutes; season with salt and pepper, to taste. Stir in quinoa until well combined.

  5. 3) Serve immediately, garnished with Parmesan, if desired
