Broiled Summer Squash

Shopping List

  1. Organic Summer Squash (1 lb)
    Avocado oil,
    peanut oil, or extra virgin olive oil
    Salt and pepper
    Thyme (1 bunch)
    Lemons (1 ct)
    Broken walnuts

Ingredients

2-3 medium summer squash (14-18 ounces), sliced in fourths lengthwise
2 tablespoons avocado oil, peanut oil, or extra virgin olive oil
Salt and pepper
1 tablespoon thyme
Zest from 1 lemon
1/4 cup broken walnuts


Directions

1)Preheat the broiler.
2)Line a rimmed baking sheet with aluminum foil and drizzle 1 tablespoon of oil over the top.
3)Arrange summer squash in a single layer.
4)Brush with remaining 1 tablespoon oil and season with salt and pepper.
5)Broil until summer squash are deep golden brown, 8 to 10 minutes.
7)Remove from oven, sprinkle thyme, broken walnuts and lemon zest over the top. Serve warm.
